Sweet Potato & Chimichurri Tacos
These sweet potato tacos are the perfect weekend dinner. They're fun, delicious and packed full of flavour from the chimichurri sauce, lime juice and roasted sweet potatoes. We love to make small tacos and serve them with a crunchy slaw on the side, but they're also delicious on their own made into a bigger version by using larger wraps.

Preheat the oven to 190C (375F), fan setting.

Place the sweet potatoes onto a baking tray and drizzle with olive oil, a pinch of salt, the cumin and paprika. Mix well before cooking for ⏱️ 35-40 minutes until soft. Once soft, remove from the oven and mix through the lime juice.

Make the chimichurri sauce by very finely chopping the onion, garlic, coriander and parsley. Spoon them into a bowl before mixing through the rest of the ingredients.

Once ready to serve, warm the taco shells according to the instructions on the pack.

Top each taco with a large spoonful of the chimichurri sauce, a spoonful of roasted sweet potatoes, a sprinkle of the drained black beans, chopped coriander and a drizzle of your favourite spicy sauce.
