Slice the cucumbers into thin chips, trimming and discarding the blossom ends. Layer in a large bowl with the pickling salt, then cover with cold water and ice. Soak at room temperature about ⏱️ 3 hours.

Drain the cucumbers and rinse well under cold running water to remove the surface salt. Let drain.

Prepare the water bath canner, jars, and lids.

Combine the sugar, cider vinegar, and turmeric in a large pot. Bring to a boil, stirring until the sugar dissolves and the turmeric colors the brine.

Add the drained cucumbers to the brine and heat just below boiling, until the chips are hot.

Pack each hot jar with the sliced garlic, mustard seed, and dill seed (or a dill head or fronds), plus Pickle Crisp if using. Add the hot cucumber slices, then ladle brine over to 1/2 inch headspace, keeping everything submerged.

Process in a boiling water bath, ⏱️ 10 minutes for pints or ⏱️ 15 minutes for quarts, adjusting for altitude. Rest ⏱️ 5 minutes, then cool undisturbed 12 to ⏱️ 24 hours before checking seals. Wait two weeks before opening.
