Sweet & Spicy Peanut Butter
It may not be a pantry staple (just yet) but we love this sweet and savoury nut butter. It’s superbly versatile — spread it on wraps or sandwiches, on avocado toast, dip with cucumber sticks, or drizzle over roast vegetables. And for something truly indulgent, try dunking a square of dark chocolate into the jar. As with all of our nut butter recipes, feel free to use any mix of nuts and seeds.

Preheat oven to 180°C / 160°C fan / 350°F. Place the peanuts on a baking tray and roast for ⏱️ 12-15 minutes until darkened, fragrant and beginning to release their oils.

Add the nuts to a food processor and blend until smooth and creamy, stopping to take breaks if you’re concerned about your machine overheating.

Add the chilli flakes, smoked paprika, maple syrup and flaky sea salt. The mixture will seize slightly once these are added due to the change in temperature but it will return to smooth and glossy with several more minutes of blending.

Pour into a jar and store at room temperature for up to three months.
