Mix together the oat milk, milled flax seeds, and vanilla bean paste in a deep plate. Set aside until thickened, ⏱️ 10 minutes.

Place the bread into the oat milk mixture and set aside to absorb for ⏱️ 5 minutes, turning halfway to ensure even soakage. ( scrape off any particularly large parts of flaxseed as they burn easily)

Place a large nonstick frying pan over medium-high heat and add the coconut oil. Swirl to coat the pan with a thin layer of melted oil. Add the bread and cook, undisturbed, until golden, ⏱️ 2-3 minutes per side. Transfer to a serving plate. Add the frozen berries and cook, stirring throughout, until softened and start to release their juices, about ⏱️ 2 minutes.
