Preheat the oven to 160°C fan / 320°F fan. Line a 20 x 28cm shallow baking tray with baking parchment.

In a large bowl, combine the oats, coconut sugar, flaxseed, cinnamon, dried fruit, walnuts, mixed seeds and lemon zest.

In a separate bowl, stir together the almond butter and soya milk until smooth. Pour the wet mixture into the dry ingredients and mix until you have a sticky dough.

Transfer the mixture to the baking tray and press down firmly with the back of a spoon to into an even layer.

Bake for 25—⏱️ 35 minutes until firm and golden and crispy at the edges. Allow to cool fully on a wire rack before slicing into squares.
