Supercharged Kale & Walnut Pesto
Need a nutritious dinner in 10 minutes? This is a winter version of our much-loved edamame pesto recipe. It still boasts 5 different plant-based foods, meaning it’s a great way to get different sources of protein and fibre into one meal. It’s delicious tossed through pasta, spread on toast or as a dip mixed with yoghurt.

📝 Preparation Steps

Place all of the ingredients in a food processor or blender and add a generous pinch of salt; pulse for 10–⏱️ 15 seconds until evenly combined. If you prefer a smooth pesto continue blitzing until smooth (if you’re using a blender may need a splash more olive oil). Taste to check the seasoning and adjust as needed.

If you’re not using the pesto straightaway, transfer to a clean jar and cover with a little extra olive oil, then seal and store in the fridge for up to 5 days.
