Mix together the oat milk, milled flax seeds, and vanilla bean paste in a deep plate. Leave to thicken for ⏱️ 10 minutes.

Place the bread into the thickened milk and leave to absorb for five minutes, turning halfway to ensure even soakage (be careful to scrape off any particularly large parts of flax seed as they burn easily).

Place a large nonstick frying pan over medium-high heat and add the coconut oil. Swirl to coat the pan with a thin layer of melted oil. Add the bread and cook, undisturbed, until golden, ⏱️ 2-3 minutes per side. Transfer to a serving plate. Add the frozen berries and cook, stirring throughout, until softened and start to release their juices, about ⏱️ 2 minutes.
