Add the sunflower seeds to a food processor or high-powered blender. Process until the seeds become a coarse meal.

Continue processing, scraping down the sides as needed, until the mixture becomes thick and clumpy.

Continue processing until the natural oils release and the mixture becomes smooth and creamy. If needed, add 1 tablespoon neutral oil at a time until the sunflower seed butter reaches your desired consistency.

If desired, stir in salt and/or sweetener to taste. Transfer to an airtight container and cool completely before storing.
