This is the perfect quick dinner or lunch to enjoy on a busy day. It's so simple to make and packed full of delicious veggies. We love to enjoy it hot, straight out of the pan but it's also delicious enjoyed cold for a packed lunch the next day.

Place a large pan over a medium heat and add a drizzle of olive oil. Once warm, add the red onion, garlic and a large pinch of salt. Cook for ⏱️ 5 minutes before adding the sliced red pepper and broccoli. Cook for a few minutes until the vegetables turn soft but still have a bite.

Cook the rice according to the instructions on the pack. Once cooked, remove from the heat and stir through the pan of vegetables.

In a small bowl, mix together the tahini, tamari, sesame oil and the juice of 1 lime. Pour the mixture over the rice and mix well until everything is coated in the dressing.

Spoon into bowls and top with a squeeze of fresh lime juice, sliced spring onions and a pinch of sesame seeds.
