Summer Salad with Jersey Royals
This is one of those recipes that seems simple but really delivers on flavour. It’s super crunchy and fresh – perfect for summer lunches in the park. The Jersey royals are the star of the show; soft, buttery and enveloped in a zingy mustard dressing (which we’d strongly recommend you make a big batch of!). It’s great for prepping ahead – just store the dressing separately and you’re good to go.

📝 Preparation Steps

Pop the potatoes into a large of salted water and bring to the boil. Cook for 20—⏱️ 25 minutes until tender, then drain in a colander.

Tip the potatoes back into the pan and roughly crush with a wooden spoon. Stir in the herbs, a drizzle of olive oil and season generously.

To make the dressing, whisk together all the ingredients in a jar or a small bowl until emulsified. Season with salt and lots of pepper.

Transfer the potatoes to a large salad bowl, along with the lettuce, radish, sugar snap peas and seeds. Pour over two-thirds of the dressing and toss together.

Divide the salad between plates and serve with the remaining dressing on the side.
