Sumac Tomatoes & Chickpeas on Toast
Rich in protein, fibre, and healthy fats, this quick meal is a winner any time of day. Seasoning this dish with lots of lemon and fresh parsley makes this toast extra bright. We love the tangy taste of sumac sprinkled on the tomatoes. Note: this recipe uses half a can of chickpeas for one meal. Store the other half and make this recipe again for another meal.

Zest half of the lemon; set zest aside. Roughly mash the chickpeas with either a fork or a potato masher in a medium bowl. Squeeze over some fresh lemon juice, add the tahini, and stir to combine. Donβt worry about getting it smooth as this is a rough, chunky mix. Stir in the tomato.

Rub the warm toast with the clove of garlic. Place toast on a plate and spoon over the chickpea-tomato mixture. Drizzle with olive oil, sprinkle the lemon zest on top, and squeeze over some more lemon juice. Top with sumac, parsley, and some flaky sea salt.
