Sumac Roasted Cauliflower with Crispy Butter Beans & Almond Dressing
This is one our go-to salads at DE HQ at the moment! It’s the ultimate balance of flavours and textures – sweet, sticky shallots, charred cauliflower, crispy butter beans, tangy sumac and fresh herbs. It’s simple, satisfying and perfect for sharing.

Preheat the oven to 200°C fan / 430°F. Place the almonds in a small bowl and cover with 150ml / 5 fl oz boiling water. Set aside to soften.

Add the cauliflower and shallots to a large baking tray. Drizzle generously with olive oil and season with salt. Roast for 30—⏱️ 35 minutes until tender and golden.

When the veg have 10—⏱️ 15 minutes left, tip the butter beans onto a small baking tray, drizzle with olive oil and season with salt. Roast for the remaining 10—⏱️ 15 minutes until crispy. You can also clear a corner of the cauliflower tray and add the beans there.

To make the dressing, add the almonds and their soaking water to a high-speed blender. Add the remaining dressing ingredients, season generously and blitz until smooth – it should be the consistency of double cream.

To serve, spoon half of the dressing onto a serving platter. Peel the shallots, then add them to the plate along with the crispy butter beans and cauliflower. Sprinkle over the sumac, Aleppo pepper (if using) and herbs. Finish with a little extra virgin olive oil and serve with the remaining dressing on the side.
