Preheat your oven to 400 degrees Fahrenheit. Scrub and pat dry each sweet potato. Pierce each potato several times with a fork to allow steam to escape.

Wrap each potato individually in aluminum foil and place them on a baking sheet. Bake for 55 to ⏱️ 60 minutes, or until fork-tender. Let cool for ⏱️ 10 minutes.

While potatoes bake, heat canola oil in a large skillet over medium heat. Add ground turkey and chopped onion, cooking for 7 to ⏱️ 8 minutes, breaking up the turkey until browned and cooked through.

Stir in the rinsed black beans, chili powder, cumin, garlic powder, and half a teaspoon of salt. Mix well. Add 3 to 4 tablespoons of water, bring to a simmer, and cook for 1 to ⏱️ 2 minutes until slightly thickened. Remove from heat.

Carefully cut a slit down the center of each cooled sweet potato, without cutting all the way through. Gently push the ends to open a pocket and fluff the inside with a fork. Season with the remaining quarter teaspoon of salt.

Spoon the turkey and black bean filling generously into each sweet potato. Sprinkle shredded Monterey Jack cheese over the top of each potato.

Return the stuffed potatoes to the baking sheet and bake for another 2 to ⏱️ 3 minutes, or until the cheese is melted and bubbly. Watch carefully to prevent burning.

Remove from oven. Top each loaded sweet potato with a dollop of guacamole, a spoonful of salsa, and a sprinkle of fresh minced cilantro. Serve immediately.
