Start by preheating the oven to 375 degrees F; then spray a 9x13-inch casserole dish with cooking spray.

Add the spinach, chopped sun dried tomatoes and garlic to a mini food processor; then blend together to form the filling.

Place the chicken slice on a clean surface; then top each with some of the prepared filling.

Add approximately 1 tablespoon of Goat cheese to the top of the spinach mixture; then roll up the chicken and place seam side down in the casserole dish. Repeat for all pieces of chicken until they've all been stuffed.

Next, spray the top of the chicken with cooking spray and season with salt and pepper. If you'd like, you can also add some balsamic glaze to the top as well at this point.

Place the dish into the oven and cook ⏱️ 25-30 minutes until a meat thermometer inserted into the chicken has a reading of 165 degrees F (74 degrees C).
