Put ½ of the strawberries, the maple syrup, lemon juice and zest in a pan and bring to a simmer. Simmer for ⏱️ 5 minutes until the strawberries have reduced and become thick and syrupy. Stir through the remaining strawberries and set aside to cool completely.

Meanwhile, mix together all of the ingredients for the oats and then stir through ¾ of the strawberry mixture. Divide between glasses, cover and leave in the fridge overnight. The next day, finish by spooning the remaining strawberries on top and add a sprig of mint, if you like.
