Preheat the oven to 450 degrees F.

Place the bottom halves of the croissants on a baking sheet and layer with the slices of Brie. On the other side of the baking sheet, lay the prosciutto in a flat, even layer. Place in the oven and bake for ⏱️ 8-10 minutes or until the cheese is melted and the prosciutto is crispy.

Meanwhile, cook your eggs to your liking.

Remove the croissants from the oven and top with slices of avocado and strawberries. Drizzle the strawberries with honey and sprinkle lightly with salt. Add the crispy prosciutto and then the egg, sprinkle with salt + pepper. Add a handful of arugula (if desired) and a few basil leaves. Lightly drizzle the whole sandwich with honey. Now place the top half of the croissant on the sandwich, break into that egg and...devour!
