Sticky Tamari Tofu & Spelt Noodles

In a large bowl, toss together the tofu, cucumber, chilli (if using), tamari, vinegar and maple syrup. Set aside for ⏱️ 10 minutes to marinate whilst you prepare the remaining ingredients.

Warm a small frying pan over a medium—low heat, add the seeds and toast for 4—⏱️ 5 minutes until golden. Remove from the pan and set aside.

Bring a medium saucepan of salted water to the boil. Cook the noodles according to packet instructions, adding the edamame for the final 2—⏱️ 3 minutes. Drain and refresh under cold water until cool, then drizzle with a little sesame oil.

Tip the noodles and toasted seeds into the tofu and toss everything together. Divide into bowls, topping with watercress and a drizzle of crispy chilli oil.
