Sticky Miso Mushroom Sandwich
This is a simple lunch packed full of flavour and veggies. The miso mushroom sauce is thick and delicious, with the wilted spinach adding some freshness and the sliced spring onions adding a crunch. We love to serve this on thick slices of sourdough.

Place a large pan over a medium heat and add a drizzle of sesame oil. Once warm, add the sliced mushrooms, garlic and a large pinch of salt. Cook for ⏱️ 5-10 minutes until soft.

Mix through the brown rice miso paste, maple syrup, tamari, brown rice vinegar and lime juice and cook for ⏱️ 5 minutes until you get a thick, sticky sauce around the mushrooms. Mix through the sesame seeds before removing from the heat.

Toast the bread and spoon the mushrooms onto one slice.

Place the pan back on the heat and add the spinach with a small splash of water. Cook for a few minutes until the spinach wilts, before spooning on top of the mushrooms.

Sprinkle with the sliced spring onions before sandwiching with the second piece of toasted bread.
