Sticky Almond Butter Granola Bars
We were playing around with some recipe ideas using our granola and ended up making these sticky, chewy bars which we’re all a little obsessed with! They’re so gooey and delicious, just so incredibly moreish – once you have one, you’ll want the whole tray.

Preheat the oven to 170C, fan setting. Line a baking tray with baking parchment.

Place the coconut in the oven and toast for ⏱️ 5 minutes until it becomes slightly golden.

Once toasted, transfer the coconut into a large bowl and mix through the granola, almond butter and a pinch of sea salt.

Place the brown rice syrup into a small pan over a medium heat and bring it up to the boil.

Once it begins to bubble, remove from the heat and pour over the granola mixture. Mix well until everything is coated.

Spoon the mixture into the lined baking tray and push down well to ensure everything is nicely compact and the top is even.

Place in the fridge for at least ⏱️ 1 hour to set, before cutting into bars.
