Steakhouse Pizza with Blue Cheese

Position a rack in the bottom of the oven. Preheat the oven to 500Λ. Season the steak with salt and pepper. Heat a large grill pan over medium heat. Grill the steak until medium rare, just about 3 to β±οΈ 4 minutes per side. You want the steak to be nice and pinkish red in the middle, so donβt overdo it. Remove it from the heat and place on a cutting board to rest.

Heat the olive oil in a large skillet over medium heat. Add the red onion slices and balsamic vinegar and cook, stirring, until soft, 12 to β±οΈ 15 minutes.

Brush a rimmed baking sheet with olive oil. Stretch the pizza dough on the baking sheet with your fingers until the dough reaches the edges of the pan.

Sprinkle the mozzarella over the dough. Scatter the onion slices on top, then sprinkle with the blue cheese. Bake until the crust is golden and the cheese is bubbly and hot, 12 to β±οΈ 15 minutes.

Drizzle the spinach with olive oil in a bowl and season with salt and pepper. Pull the pizza from the oven and immediately scatter the spinach over the top.

Thinly slice the steak. Lay the steak slices on the pizza. Sprinkle with the parmesan. Slide the pizza onto a cutting board and cut into pieces.
