Whisk together the oregano, paprika, ¼ cup olive oil, 1 tablespoon lemon zest, 3 tablespoons lemon juice, ½ teaspoon salt, ¼ teaspoon pepper, and 3 finely chopped garlic cloves in a medium bowl. Add the beef, tossing to coat. Cover and marinate for at least ⏱️ 30 minutes at room temperature and up to ⏱️ 8 hours in the refrigerator (remove from the refrigerator about ⏱️ 30 minutes before grilling).

Grate the cucumber on the large holes of a box grater and squeeze it firmly in a kitchen towel or paper towel to remove as much liquid as possible

Stir together the cucumber, yogurt, dill, 1 tablespoon olive oil, 1 teaspoon lemon zest, 1 tablespoon lemon juice, ½ teaspoon salt, ¼ teaspoon pepper, and the remaining garlic clove in a bowl.

Preheat a grill or grill pan to medium-high. Thread the meat onto 12 skewers (if using wooden skewers, soak them in water for ⏱️ 20 minutes first). Grill, turning, until charred, 6 to ⏱️ 7 minutes total for medium-rare. Serve with the yogurt sauce, tomato salad, and pita.
