Bake the fries as the label directs. Meanwhile, prepare the steak: Coat the steak with 2 tablespoons olive oil. Season on both sides with the salt and lemon pepper.

Heat a cast-iron skillet over medium-high heat. Add the remaining 1 tablespoon olive oil, then add the steak and cook to desired doneness, 4 to ⏱️ 5 minutes per side for medium-rare. Transfer to a cutting board and let rest 8 to ⏱️ 10 minutes before slicing.

Make the hollandaise sauce: Melt the butter in a small saucepan over medium heat until hot and foaming.

Meanwhile, combine the egg yolks and lemon juice in a blender and blend until thoroughly combined, about ⏱️ 15 seconds. With the blender running, slowly drizzle in the melted butter and blend until the sauce thickens, a few seconds more. Add the hot sauce, salt and pepper. Blend for a few more seconds.

Make the salad: Toss the greens in a large bowl with the olive oil, lemon juice, salt and pepper. Divide the greens among plates. Top with some steak, then add the fries. Spoon some of the hollandaise sauce over the top and garnish with the pickled onions. Serve the remaining hollandaise sauce on the side.
