About ⏱️ 30 minutes before cooking, remove the steak from the refrigerator and pat dry with paper towels. Season with 1 teaspoon salt and ¼ teaspoon pepper.

Mix together the butter and garlic in a small bowl.

Heat 1 tablespoon vegetable oil in a large cast-iron skillet over medium-high heat. Add the steak and cook until well browned, 4 to ⏱️ 5 minutes per side for medium. During the last minute of cooking, pour the mirin and 2 tablespoons of the soy sauce over the steak, then dollop with half of the garlic butter. Remove to a cutting board and let rest for ⏱️ 10 minutes. Wipe out the skillet.

Heat the remaining 1 tablespoon vegetable oil in the same skillet over medium-high heat. Add the zucchini, onion, mushrooms, and remaining ½ teaspoon salt and ¼ teaspoon pepper and cook, tossing occasionally, until the vegetables begin to turn golden brown, 6 to ⏱️ 8 minutes. Add the remaining 2 tablespoons soy sauce and garlic butter and toss to coat.

Slice the steak against the grain. Serve the steak and vegetables over rice and top with yum yum sauce.
