In a small bowl, combine the salt, paprika, cumin, garlic powder, onion powder, pepper, and brown sugar. Pat the steaks dry with a paper towel and season both sides generously with the spice mix. Let them sit at room temperature for ⏱️ 30 minutes.

Heat a large cast-iron or heavy-bottomed skillet over medium heat. Add 1 tablespoon of the butter and let it sizzle and start to brown. Add the steaks and cook to medium-rare, about ⏱️ 1 minute per side. Transfer to plates and let them rest.

Wipe out the skillet, reduce the heat to medium-low, then add the remaining 1 tablespoon butter. Crack the eggs into the skillet, keeping them separate, and cook until done to your liking, about ⏱️ 4 minutes for soft sunny–side up. Season with salt and pepper.
