Spring Bolognese
I love asparagus, it’s one of my favourite vegetables and it really sings in this dish where it’s simmered with lentils, spinach, onions, passata and celery, then tossed with fresh basil and spaghetti. This is hearty, seasonal and just so good.

Heat the oil in a casserole or saucepan and add the onion and celery, season well with salt and pepper, and cook over a medium heat for 5–⏱️ 7 minutes until soft.

Add the lentils, asparagus and spinach (if using fresh, you will need to do this in a couple of stages: let the first batch wilt before adding the next), stir well then pour in the hot stock. Bring to the boil and simmer for a couple of minutes.

Add the passata, bring back to the boil and simmer for 10–⏱️ 15 minutes until the asparagus is tender.

Meanwhile, cook the pasta according to the instructions on the pack, then drain well.

Stir the basil into the sauce then mix this through the spaghetti.
