In a medium bowl, combine the softened cream cheese, squeezed spinach, chopped artichoke hearts, mozzarella cheese, and parmesan cheese. Season with salt and pepper, and stir until well blended.

Cover the bowl and chill the filling in the refrigerator for at least ⏱️ 30 minutes to make it firmer and easier to handle.

Place about one and a half teaspoons of the chilled filling into the center of a single wonton wrapper.

Lightly brush the edges of the wonton wrapper with the beaten egg. Bring two opposite corners together and pinch firmly, then bring the other two corners to the middle and pinch everything together to seal the wonton.

Heat about four inches of oil in a deep pan to 350°F. Carefully fry the wontons in batches of 5-6 for about ⏱️ 3-5 minutes, turning occasionally, until golden brown.

Remove wontons with a slotted spoon and drain on paper towels. Mix the diced tomatoes and chopped parsley, and serve with the warm wontons.
