Heat the oil in a large pan over medium heat, add the onion and cook until tender, about ⏱️ 5-7 minutes.

Add the garlic and cook until fragrant, about a minute.

Add the quinoa and broth, bring to a boil, reduce the heat and simmer, covered until the broth has been absorbed, about ⏱️ 15 minutes, before letting sit, covered for ⏱️ 5 minutes.

Mix in the parsley, dill, green onions, lemon juice, and feta.
