Spinach & Roasted Almond Pesto Pasta
Pesto pasta is one of our favourite dishes to make for lunch or dinner. This version tastes delicious with the homemade pesto made from roasted almonds, roasted garlic, lemon juice and olive oil. We love to use thick pasta ribbons for this recipe but you can use whatever you have at home.

Make the pesto by placing the basil, roasted almonds, olive oil, water, garlic cloves, nutritional yeast, the juice of ½ lemon and a good pinch of salt into a powerful blender or food processor. Blend until the mixture comes together to form a slightly chunky pesto.

Cook the pasta according to the packet instructions. Once cooked, drain and spoon back into the pan.

Mix the pesto and spinach through the pasta; place over medium heat until everything has warmed through and the spinach has wilted.

Serve with a sprinkle of black pepper and a squeeze of lemon juice.
