Cook the pasta according to the packet instructions. Drain, place into a large bowl and set aside.

Place the tofu, oat milk, 1 tablespoon olive oil, nutritional yeast, garlic, mustard, tomato purée, paprika, lemon, a pinch of chilli flakes and a large pinch of sea salt into a high-speed blender. Blitz into a creamy sauce.

Mix the pasta with the spicy tomato sauce. Add the red pepper and cherry tomatoes; toss to combine, check the seasoning and add a little more salt if needed.

Toss the watercress through the pasta. Divide between the 4 plates and serve with a drizzle of oil and pinch of chilli flakes.
