Spicy Ramen Soup
This ramen is full to the brim with fresh, vibrant vegetables. It's also super quick and easy to whip up for lunch or supper. Feel free to substitute any of the veg for what you have in the fridge!

Preheat oven to 200c, fan setting.

Cut the tofu into small cubes, drizzle with a little sesame oil and cook in the oven for ⏱️ 15-20 minutes until crispy - you can also pan fry these as an alternative.

Place a pan over a medium heat and add a drizzle of sesame oil - add the onions and garlic and cook for ⏱️ 5-10 minutes until soft.

Add the miso paste and tamari and cook for another ⏱️ 2 minutes before adding the water and stock cube

Bring to the boil before reducing the temperature and leaving to simmer for ⏱️ 10-15 minutes.

Place another pan over a medium heat and add a drizzle of sesame oil.

Add the mushrooms, bok choy and a sprinkle of salt and cook, untouched, for ⏱️ 10 minutes until soft.

Give everything a really good mix and cook for a further ⏱️ 2 minutes, before taking off the heat.

Once ready to serve, mix the mushrooms, bok choy, noodles and tofu through the soup. Pour into bowls and top with the spring onions, red chilli and chilli flakes.
