Spicy Pepper Pasta

Place the cashews and sunflower seeds in a small bowl with 50ml of boiling water, leave to soak for about five minutes or until you blend the sauce.

Heat a drizzle of olive oil in a medium saucepan over medium. Add the onion and red pepper and season with a pinch of salt, and cook, stirring occasionally, until softened, about ⏱️ 4 minutes. Add the garlic and cook, stirring often, until fragrant, about ⏱️ 1 minute.

Add the onion-red pepper mixture to a high-speed blender along with the oat or almond milk, balsamic vinegar, nutritional yeast, harissa, maple syrup, lemon juice, and the soaked cashews and sunflower seeds, plus their soaking water. Blend until smooth and creamy. Season with salt to taste.

Give the saucepan a quick rinse, then cook the pasta in salted boiling water according to packet directions. When it is nearly cooked, with about a minute to go, reserve a mugful of the cooking water and drain the pasta. Return the pasta to the pan and add the sauce. Gradually add some of the pasta cooking water, about 60ml, and stir until the pasta is coated and the sauce is thick and glossy. Add up to 60ml more pasta cooking water to loosen the sauce, if needed.

Serve with fresh parsley, several grinds of black pepper, and chilli flakes. Drizzle with more harissa, if desired.
