Place a medium heavy-bottomed saucepan over medium heat and add a drizzle of sesame oil. Add the mushrooms and a sprinkle of salt and cook, stirring occasionally, for 7–⏱️ 8 minutes, until the mushrooms have reduced, turned golden and any liquid has evaporated.

Add the garlic and cook for 1–⏱️ 2 minutes until fragrant. Then add the miso, peanut butter, tamari, maple syrup and coconut milk; stir to combine. Fill the empty coconut milk tin with water and add this to the pan, along with the rice noodles. Press the noodles down, ensuring they’re submerged in liquid; then cover the pan and leave to simmer gently for ⏱️ 8-10 minutes, stirring occasionally, or until the noodles are cooked.

Remove from the heat. Serve topped with peanuts, coriander, chilli and a squeeze of fresh lime juice, if desired.
