Begin by making the pickle. Place the chilli, red onion, vinegar and maple syrup in a small bowl with a large pinch of salt. Set aside for ⏱️ 15 minutes, while you make the salad.

Cook the quinoa according to packet instructions. Once cooked, drain and set aside.

Place a pan of water over medium heat. Once boiling, add the green beans and simmer for ⏱️ 4 minutes until tender. Drain and run under cold water until cool to touch.

Toss the green beans, mango, mint, quinoa and olive oil together in a large bowl. Strain the pickle and stir the liquid through the salad. Season to taste and serve topped with the drained pickle.
