We love this spicy take on our magic dressing. Full of protein, it transforms any plate of vegetables into a hearty, satisfying meal. If you are sensitive to spice you can reduce the amount of rose harissa, or try another of our magic dressing variations.

Preheat the oven to 200°C / 180°C fan.

Brush the sweet potato wedges with olive oil on a baking tray. Bake until tender when pierces with a fork, ⏱️ 18-20 minutes. Let cool slightly while you assemble the salad.

Mix the kale, lemon juice, and olive oil in a medium bowl and massage, using clean hands, until tender, ⏱️ 2-3 minutes. Season with salt to taste. Serve and top with the sweet potato wedges, drizzle over the spicy harissa dressing and sprinkle with pomegranate seeds.
