Preheat the oven to 325°F. Line a baking sheet with foil.

Place the ham cut-side down on the prepared baking sheet. Score the skin about ½ inch deep with a sharp knife, tracing over the existing lines.

In a small saucepan, stir together the Maille Honey Dijon Mustard, brown sugar, grapefruit juice, chipotle powder, cumin, salt, and pepper over medium heat. Cook until smooth and syrupy, about ⏱️ 5 minutes.

Brush half the glaze all over the ham. Cover with foil and bake for ⏱️ 30 minutes. Increase the oven temperature to 425°F, remove the foil, and brush the remaining glaze over the ham. Bake, rotating halfway through, until the skin is darkened and caramelized, 35 to ⏱️ 40 minutes more.
