Spicy Fried Rice

Heat 1 tablespoon of oil in a large frying pan over high heat. Add the peppers and tofu and cook for 6–⏱️ 8 minutes until the peppers have softened and the tofu is turning golden. Avoid moving it around the pan, so that it has a chance to colour.

Add 1 more tablespoon of oil, the garlic, smoked paprika, chilli flakes and rice; stir so that everything is coated. Turn up the heat to high and fry for ⏱️ 3 minutes until the rice is warm.

Add the lime zest and juice, soy sauce and spring onions; toss to combine. Serve with extra spring onions, soy and a sprinkling of chilli flakes.
