In a large bowl, whisk together the coconut milk, lime juice, sambal oelek, honey, salt, garlic, and ginger. Remove 3/4 cups of the marinade and set aside.

Add the chicken to the remaining marinade in the bowl, cover, and marinate for at least ⏱️ 20 minutes and up to ⏱️ 3 hours in the refrigerator.

In a small saucepan, bring the reserved marinade just to a simmer over medium heat to melt the coconut milk solids. Set aside.

Preheat a grill or grill pan to medium-high heat. Lightly brush the grill grates or pan with oil. Remove the chicken from the marinade and pat dry with paper towels. Grill the chicken until well marked and a thermometer inserted in the center registers 165°F, about ⏱️ 5 minutes per side.

Brush the chicken with some of the warmed sauce and serve over rice. Top with cilantro, fresno peppers, lime wedges, and the remaining warm sauce.
