Spiced Parsnip Soup
With just a handful of ingredients, this soup is a perfect speedy supper. If you like big batch cooking then definitely try making this one in large quantities and putting the extra portions away in the freezer for another day. I love this serving with some crunchy sourdough drizzled with olive oil, but it’s delicious as a starter or side too!

Place the parsnips into a pan over a medium heat and cover with the boiling water. Cook for ⏱️ 15-20 minutes until soft. Once soft, drain the water.

Place the onion and garlic in a pan over a medium heat. Add a drizzle of olive oil and cook for ⏱️ 5-10 minutes until soft.

Once the onions are soft, add in the drained parsnips and ground cumin. Stir together and cook for another ⏱️ 2 minutes.

Add in the almond milk, yogurt, salt and pepper. Mix well and cook for another couple of minutes.

Either pour the mixture into a blender or use a hand blender in the pan to blitz the soup together until smooth.

Pour the soup back into the pan (if using a blender) and heat for a couple of minutes before serving. You may want to add a dash more almond milk if the soup is too thick.
