Spiced Cauliflower & Coconut Soup
We love having cauliflower soup throughout the year, it’s a great way to get your veggies in. The cauliflower makes up a delicious base in this soup, with the coconut milk adding a creaminess and the cumin creating a delicious spice. We'd recommend making double portions of this and freeze the rest.

Start by heating a drizzle of olive oil in a saucepan over a medium heat then add the chopped onion and garlic and cook, with the lid on, for ⏱️ 10-15 minutes until soft.

Remove the lid then add the cumin and cook for a further ⏱️ 2 minutes. Add in the cauliflower florets, chopped parsnip, coconut milk, water, a good pinch of salt and pepper and bring to a boil.

Reduce the heat and simmer for ⏱️ 30-35 minutes, with the lid slightly ajar, until the cauliflower and parsnip are really soft.

Once soft, use a hand blender to blitz the soup until smooth. Serve with an extra dollop of yoghurt and drizzle of oil.
