Spelt Hot Cross Buns
These spelt hot cross buns are the perfect weekend bake - they fill the room with incredible smells when they are fresh out of the oven and are so deliciously moreish. A little warning that this is a harder and longer recipe than most of our others, so it would be worth giving it a read through before committing.

Mix the chia with the water and leave to sit for ⏱️ 10 minutes.

In a large bowl, whisk together the flour, salt, yeast, mixed spice and sugar until there are no lumps. Add the milk and chia seeds and whisk together to form a dough.

Place the mixture into a kitchen mixer and add the raisins and coconut oil. Use the bread hook attachment to knead until a thick, elastic dough forms - about ⏱️ 10-15 minutes.

Place the dough into a large mixing bowl and cover with a kitchen towel. Place in the warmest place in the room and wait until it doubles in size - this could take anywhere from ⏱️ 30 minutes to an hour.

Once the dough has doubled in size, weigh out 14 equal sized balls (they should be around 80g each). Using your hands, shape them into ball shapes and place them on a baking tray with a sprinkle of plain flour. Let them prove again until they reach double the size - this could again take anywhere from ⏱️ 30 minutes to an hour.

In the meantime, mix the plain flour (for the icing) with the maple syrup until it creates a thick paste - place into a piping bag.

Once the buns have doubled in size, pipe a cross of icing across each.

Once ready to cook - preheat the oven to 200C (400F), fan setting.

Cook the buns for ⏱️ 10-15 minutes until golden. Once cooked, remove from the oven.

Glaze each bun with a little more maple syrup as soon as they come out of the oven.
