Speedy Smashed Cucumbers
This is one of those dishes that is fun to make as well as being packed with spicy, sweet, tangy deliciousness. Smashing up the cucumbers helps them marinate better and take on more of the pickling flavour in a short amount of time. Turn them into a quick and delicious lunch by spreading some creamy coconut yoghurt onto a slice of toast and topping with the pickled cucumber, a sprinkle of coriander and crack of pepper.

Peel the cucumbers in alternating green stripes (this ensures the cucumbers are not as tough to eat). Then cut the cucumbers in ½ lengthways and scrape out the seeds from the centre with a teaspoon.

Laying the cucumber halves flat, bash them with the back of a knife or rolling pin until slightly flattened. Then cut them diagonally widthways into 2cm / ¾″ chunks.

To make the pickling liquid, combine all of the pickle ingredients in a bowl. Mix the cucumber through the liquid and leave to sit for ⏱️ 20 minutes (or longer for a stronger flavour). Garnish with a sprinkling of coriander.
