Toast the sourdough and rub both sides of each slice with the raw garlic. Cut into bite-sized pieces.

Warm a drizzle of olive oil in a large frying pan set over medium heat; add the sourdough and cook for 4–⏱️ 5 minutes until crisp and golden. Season with flaky sea salt and set aside to cool.

To make the dressing, place all of the dressing ingredients in a high-speed blender; blitz until smooth, adding a splash of water to loosen (as needed — it should be the consistency of single cream).

In a large bowl, toss together the rocket, spinach, cucumber, butter beans, dressing and croutons. Serve immediately.
