Speedy Avocado & Kimchi Toastie
It’s safe to say that we’re slightly obsessed with this toastie in the DE office at the moment! We’ve revisited an old community favourite recipe, and it certainly stands the test of time. It’s the perfect speedy lunch, and we love it teamed up with a crunchy slaw, green salad or a mug of steaming soup.

📝 Preparation Steps

Lightly drizzle one side of each slice of bread with olive oil (this will be the outside of the toastie).

Take one slice of bread (olive oil side on the outside) and layer on the avocado, tomato, kimchi and jalapeños (if using). Season with a pinch of salt and top with the other slice of bread.

Warm a medium frying pan over medium-low heat, then add the toastie. Press down gently using a toastie press, or a clean saucepan lid that fits inside the pan. Cook for 3–⏱️ 4 minutes on each side until crisp and golden.

Slice in half before serving. Delicious with a mug of soup, a crunchy slaw or a green salad.
