Combine figs and lemon in a Dutch oven or large nonreactive pot. Cover with sugar and let sit at room temperature for at least ⏱️ 8 hours and up to overnight.

Cook over medium heat, stirring often, until sugar is fully dissolved. (If necessary, add up to 1/4 cup water.) Reduce heat to low and cook, stirring occasionally and keeping mixture around 200°F, until figs begin to break down, about ⏱️ 2 hours. Stir in vanilla. Transfer to 4 pint jars. Cool completely, then chill. Refrigerate up to 3 months.
