📝 Preparation Steps

Cook the noodles according to packet instructions. Drain and refresh under cold water until cool to touch, then set aside.

Add the garlic, ginger and coriander stalks to a mini-chopper and blitz until you have a coarse paste; set aside. You can also do this in a pestle and mortar.

Warm a drizzle of oil in a deep-sided frying pan or wok set over medium—high heat. Add the mushrooms and cook for 8—⏱️ 10 minutes, stirring frequently, until golden.

Add the garlic mixture and cook for 2—⏱️ 3 minutes until fragrant. Stir in the coconut milk, miso and tofu, along with 400ml boiling water. Simmer vigorously for 5—⏱️ 7 minutes.

Add the tenderstem broccoli, cabbage and sweetcorn. Simmer for 2—⏱️ 4 minutes until just cooked. Divide the noodles into bowls, then spoon over the hot soup and scatter over the coriander leaves.
