Preheat the oven to 375˚. Line a baking sheet with foil. Place the sweet potatoes on the baking sheet and pierce the tops two or three times with a knife. Bake until fork-tender, about ⏱️ 1 hour. Set aside until cool enough to handle, about ⏱️ 10 minutes.

Slice each potato in half lengthwise and use a spoon to scrape out the flesh into a large bowl, discarding the skins. Add the granulated sugar, milk, eggs, vanilla and salt. Mash with a potato masher until combined (no need to make it perfectly smooth).

Combine the brown sugar, pecans, flour and butter in a medium bowl. With a pastry cutter or fork, mash together until the butter is incorporated.

Spread the sweet potato mixture into a 2-quart baking dish and sprinkle the brown sugar mixture all over the top. Bake until golden brown and bubbly, 30 to ⏱️ 35 minutes.
