Cook the noodles according to the instructions on the packet. Add the frozen edamame beans for the last ⏱️ 30 seconds of cooking, just enough time to defrost them. Once they are ready drain the noodles and beans and run under cold water to halt the cooking process.

In a small bowl, whisk together the peanut butter, rice vinegar, tamari and maple syrup.

Place the noodles in a bowl with the spinach. Pour over the dressing and toss to coat evenly. Sprinkle with sesame seeds. Season with salt and chili flakes if desired.
