Lightly grease a large rimmed baking sheet. Melt butter in a medium saucepan, with a candy thermometer attached, over medium heat. Add sugar and stir until dissolved, 8 to ⏱️ 10 minutes. Add Karo syrup and 6 tablespoons water and stir to combine. Cook, stirring constantly, until mixture reaches 200°F. Add nuts and cook, stirring constantly, until mixture reaches 285°F. Remove from heat and stir in vanilla. Transfer mixture to prepared pan.

Sprinkle chocolate chips over surface and let stand ⏱️ 5 minutes. Spread chocolate with an offset spatula and top with nuts. Cool completely. Break into pieces and store in refrigerator in an airtight container up to 2 weeks.
