Line 3 baking sheets with parchment. In a large bowl, whisk the butter, sugar, honey, vanilla, and egg until combined.

In a separate large bowl, combine the flour, graham cracker crumbs, baking powder, baking soda, and salt.

Add the flour mixture to the butter mixture and combine thoroughly using a rubber spatula. Fold in the chocolate chips and mini marshmallows.

Using a 1/4-cup scoop, scoop the cookie dough and roll into large balls. Space them 2 inches apart on the prepared baking sheets. Push a square of milk chocolate into the top of each. Chill for ⏱️ 30 minutes.

Preheat the oven to 350˚F. Bake the cookies in batches until the edges are golden brown, about ⏱️ 12 minutes, rotating the pans halfway through. Remove the cookies and increase the oven to broil, letting it preheat for a couple minutes.

Add a halved large marshmallow, cut-side down, to the top of each cookie. Working with one baking sheet at a time, return the cookies to the oven and broil for 1 to ⏱️ 2 minutes to toast the marshmallow toppings. Cool on the baking sheets for ⏱️ 5 minutes, then transfer to a baking rack. Let cool slightly before serving.
