To Make the Cookie Dough

In a large bowl, combine the sugar, oil, honey and egg.

In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, cinnamon and salt, then stir this into the wet ingredients.

Fold in the chocolate chips and marshmallows, then place the dough in an airtight container and chill for at least ⏱️ 2 hours (or up to 5 days).

To Bake the Cookies

Preheat the oven to 375°F (190°C) and line 2 baking sheets with parchment paper.

Scoop the dough into 2-tablespoon sized balls and place 3 inches (5 cm) apart on the prepared sheets.

Bake the cookies, one sheet at a time for about ⏱️ 12 minutes, or until they are golden on the edges and just barely set in the center.

Let cool for ⏱️ 8-10 minutes on the pan before transferring to a wire rack to cool completely.

Store in an airtight container at room temperature for up to 3 days.
